Recently I went to a Thai restaurant and tried one of their money bags. The flavour of the filling was amazing as they included one very distinctive ingredient which took the flavour profile to a whole new level. I looked through the mix and found it, toasted shredded coconut. Who knew something so simple could change the flavour so much. For this recipe I decided to use this new ingredient and the results were fantastic!! You can make this dish with either pork or chicken mince. As the recipe is low carbohydrate and has no sugar, use the fish sauce and lime juice to balance the flavours. Yum!!
