Winter is here and we are all looking for delicious hot meals to warm us up. This recipe is a classic but with a twist, Roast Pumpkin Soup. I love my pumpkin soup thick and rich and I’ve found that if you roast the pumpkin first, it removes some of the moisture and helps to thicken the soup and develop the flavour. Once you have tried roasting your pumpkin first you will never go back. I hope you enjoy!!!!
