The pressure cooker always gets a good workout in my house when the temperature starts to drop. I find that it’s a fantastic tool to incorporate heaps of vegetables into a dish and hide them from the kids. The vegetables melt into the sauce making it thick and rich. I also love the fact that everything is cooked in one pot minimising the washing up.

If you want to add herbs to this dish, add dried herbs at the beginning of cooking and fresh herbs right at the end. This dish is easy to make and delicious served piping hot with a sprinkling of mozzarella cheese. I put a few serves into the freezer and they re-heated beautifully. Enjoy!!!
