As you know I love Cheesecake, it’s always my dessert of choice on a low carb diet and I always have some slices in the freezer ready to go for when I feel like something sweet. No added sugar Cheesecakes are also the perfect desert to make when you have friends over, they so delicious they won’t even be able to tell its low carb. I made this Baked Lemon, Lime & Coconut Cheesecake on the weekend and the combination of Lemon, Lime & Coconut is fresh and zesty perfect for summer. The chocolate and coconut in the base go really well with the topping. Baked cheesecakes take a little more effort than the chilled variety but it’s worth the extra preparation time. Enjoy!!!
