Hassleback Baked Sweet Potato‘s are so yummy and perfect to serve on a special occasion like a Christmas dinner. They do take a lot of baking time however to get the middle nice and soft, but if you put them into a slow roast such as my Easy Roast Pork Shoulder with crackling or Roast Chicken with Lemon & Herbs, you will have them in the oven with plenty of time.
Sweet Potato have a lower carbohydrate content than regular potato, but peeled and baked, orange sweet potato does still contain about 17.2g/100g of carbohydrate (data from the Australian Food Standards Nutritional Calculator), so do watch your carbohydrate level. I prefer to eat mine with the skin on for extra fibre. Served with a big dollop of sour cream these are delicious.
