What exactly is Food Science you may ask?? Good question. Food Science is the study and application of all disciplines involved in the development and manufacture of food and beverage products. This is done to ensure food and beverage products are safe for sale to everyday consumers like you and me. When undertaking studies in Food Science and Technology, students cover subjects including Mathamatics, Physics, Engineering, Chemistry (Organic and Inorganic), Product & Formulation Development, Microbiology, Nutrition, Marketing, Statistics, Quality Assurance & Food Safety Programs, Packaging, Sensory Testing, Production Planning, Finance, Purchasing, and other related subjects.
When you purchase food products from our any of our reputable Australian food manufacturers, a Food Scientist has been involved in every aspect of that products manufacture from start to finish. A Food Technologist or Food Scientist will have a hand in all areas including formulation development, ingredient sourcing, quality assurance, consumer product testing, manufacturing trials and scale up, financial, packaging design, food safety and shelf life testing, sales, marketing, and distribution. This is why Food Science is such a varied and fascinating career as it touches so many different aspects of food manufacture, food safety and product development.
Australia produces some of the cleanest and highest quality food produced in the world and this is something we should all be proud of. The governing body that has developed our Food Standards Code here in Australia is FSANZ – Food Standards Australia and New Zealand. State and territory departments, agencies and local councils are responsible for enforcing the Code which overseas the production of food and beverages. Our Australian food manufacturers are under increasing pressure to continue to supply high quality products at a reduced cost. Locally manufactured products are competing in a lot of cases against lower cost imported goods, whilst our Australian manufacturers are facing increasing labour, energy and manufacturing costs here in Australia. Australia’s population now sits at above 24 million people and Australian food and beverage manufacturers need these Australian consumers to continue to purchase, where possible, Australian made products to ensure we have a healthy Food & Beverage manufacturing industry moving into the future.
In the Food Science Facts section of this blog I’ll be looking at some of the basic categories of processed food and beverages. I’ll be going into detail on some of the more common ingredients used in these products and we will talk about how they are used in processed food and beverages and what role they play. I’ve also include links to the websites of reputable Australian food and beverage manufacturers and independant organisiations in each category. These manufactures produce high quality, locally made Australian food. In their sites these manufacturers provide fantastic additional information on the ingredients used in and the nutrition of their particular product range. This information will increase your knowledge about the foods you and your family eat everyday. For the product manufacturers, I have included these sites as sources of information for further reading as I have used their high quality ingredients for many years. I recieve no gratuities for doing so.
Just a note on this section of information. As I am not a nutritionist, I am not going to go into a lot of detail on the nutritional value of all the foods we are discussing. This section is written from a Food Science perspective and is aimed at providing information about the processed foods you eat. I won’t be talking about fresh food in this section, that will come in the Healthy Eating pages, this section is about Processed Foods only. Processed foods are those foods which have been through a process that has changed the state of the ingredient from it’s original form. Each ingredient added to processed food or beverage product performs a function and has a reason to be there. In Australia we have to ship our food and beverage products from it’s place of manufacture, all over the country and food safety is critical. As a Food Scientist I am encouraging you to learn more about what you feed to yourselves and to your families, and to have a better understanding of why certain ingredients are added to the foods you eat everyday. I am not here to tell you what and what not to eat, just to ensure that you have the knowledge and can make an informed choice next time you do the weekly shop.

As the blog progresses we will touch base on other essentials such as how to read a basic Nutritional Panel as found on any processed food product. This is critical when understanding what ingredients are going into the foods and beverages you consume.
