Here is a great snacking or dinner idea that kids and adults alike love the as they are great finger food. Pork ribs are really easy to make and absolutey delicious. Most recipes use a lot of sugar in a rib glaze or marinade, which then has a high carbohydrate level. If you use dry spice rubs, you can bake them slowly in the oven and avoid the extra sugar. Dry Spice Rubs are available from your local supermarkets, fresh fruit & vegetables shops and Indian and Middle Eastern food shops. You can experiement with a number of different Herbs & Spices or create your own flavours from scratch. If making your own spice blends, always remember to add a few tsp of salt to bring out the flavour.

You can purchase fresh ribs from your local butcher. I used pork ribs for this recipe. These ribs I purchased from my local Woolworths already spiced. If you are making your own, purchase some pre-made cajun spice mix and rub it on both sides of a 700g rack of pork ribs, focussing on the meaty parts. Let it marinade covered overnight. The next day preheat an oven to 160C. Cover the baking dish in foil and baked the ribs for 1 hour. Then remove the foil and baked for another 1 hr and 10 minutes, until the meat is tender, dry and falling off the bone. Your timing may need to be altered slightly depending on the size of the rib. Serve with a salad for a meal or reheat for a snack. Yum!!!
