Italian Pork Stew with Bacon & Chorizo.

The pressure cooker always gets a good workout in my house when the temperature starts to drop. I find that it’s a fantastic tool to incorporate heaps of vegetables into a dish and hide them from the kids. The vegetables melt into the sauce making it thick and rich. I also love the fact that everything is cooked in one pot minimising the washing up.

This Italian Pork Stew with Bacon & Chorizo is packed full of flavour and is delicious. If you want to add herbs to this dish, add dried herbs at the beginning of cooking and fresh herbs right at the end. This dish is easy to make and delicious served piping hot with a sprinkling of mozzarella cheese. I put a few serves into the freezer and they re-heated beautifully. Enjoy!!!



  • 1 1/2 tbsp oil
  • 1 onion small diced
  • 100g diced bacon
  • 1 chorizo sausage sliced into 1cm slices
  • 2 tbsp minced garlic
  • 500g rindless pork shoulder or leg diced 1inch cubes
  • 3 medium zucchinis cut in half and into 2cm slices
  • 3 celery sticks 15mm slices
  • 1 red capsicum seeds removed medium diced 
  • 1 medium eggplant medium dice
  • 1 x 700g bottle of passata + 1/2 bottle of water 
  • 2 heaped tbsp beef stock powder
  • shredded mozarella cheese to serve



  1. Prepare all the vegetables and put them to the side.
  2. Cut the meats and put the pressure cooker onto the saute setting to heat. When hot add the oil and onion and cook until clear and softened. Add the garlic, bacon and chorizo sausage and cook till browned.
  3. Add all the diced vegetables, the full bottle of passata and fill the bottle half full with water. Put on the lid and shake the bottle and pour the water into the pan. Sprinkle with beef stock powder, seal the lid and put the pressure cooker onto the curry setting for 30 minutes. 
  4. Once cooked, being very careful not to burn yourself, either turn the steam vent of the pressuer cooker to open to release the pressure quickly or leave the pressure cooker for long enough to release the pressure slowly following the instructions of your cooker.
  5. Serve piping hot and sprinkle with mozarella cheese.
