Gummy Bears.

My kids love Gummy lollies so I thought I might try to make them myself but in a sugar free version. In Australia we have this great gelatine based product from Aeroplane Jelly called Jelly Lite. They are available from Woolworths and Coles in a large range of flavours. By Jelly Crystals RS CCthemselves they are not strong enough to be used in a mould so extra gelatine powder is needed and less water than the normal recipe. I found that 4tsp extra gelatine was needed for 1 cup of water. 3tsp did not make a jelly hard enough to come out of the mould cleanly.

I was able to purchase a range of shaped moulds from ebay including the pink and blue bear moulds shown below and different ice cube tray moulds with silicon easy release bases. The bear moulds shown below came with a syringe that can be used to fill the moulds neatly and easily with the hot jelly liquid. The great thing about this snack is that it takes no time to cool in the fridge as the pieces are so small. If you make several batches of different flavours you can have them on hand in the fridge for the kids to eat when they feel like something sweet.

Ingredients

  • 4 tsp gelatine powder
  • 1 sachet Lite Jelly crystals, any flavour
  • 1 cup boiling water

  1. Bring water to the boil in a kettle. Place the empty moulds on a cookie tray or lamington tray to keep them flat while moving them in and out of the fridge.
  2. Mix the gelatine and flavoured jelly crystals in a small bowl or jug before pouring in the boiling water taking care not to burn yourself. 
  3. Slowly and carefully add the boiling water stirring with a fork until all the crystals are fully dissolved and the liquid is clear.
  4. Use the syringe to fill up the moulds and put into a fridge for about 45min to 1 hour till set. You can then release the jelly from it’s mould. Keep in air tight containers in the fridge especially in hot weather.
