Strawberry Couli Yoghurt Pops.

These ice blocks are so good and the kids loved making and eating them. Strawberry Couli Yoghurt Pops are as simple as Strawberry Couli mixed with Greek Yoghurt and poured into Ice Cream moulds. So simple to make and delicious to eat. The Strawberry Couli is lovely and sweet so you don’t need to add extra sugar to this recipe. These ice block moulds were large so I only got 6 pops at approximately 3.3g of total carb per pop. 

I made a large batch of low carb Strawberry Couli when Strawberries were in season and stored cup fulls in clip lock bags in the freezer for use later. To make these yoghurt ice blocks I let a portion of the frozen Couli defrost in the fridge overnight before using. You can make couli with any type of fruit that is in season to make these ice blocks. Blueberries are delicious and very cheap at the moment so Blueberry couli would also work very well with vanilla and greek yoghurt. 

Since making these, I have found some fantastic ice block moulds Ice Block Moulds RS CCfrom Ikea which I’ll be using from now on. They are smaller than the ones shown in the photo above, but they are the best moulds I have found as you can remove them from the stand individually and stored lying flat once they are fully frozen. I found that the ice block could be removed simply by rubbing the block between my hands to warm it up. If you have a different type of mould and you are having trouble releasing the pops from their moulds just boil some water and pour over the outer surface of the moulds until the ice block releases being careful not to burn yourself. Enjoy!!!

Ingredients

  • 1 cup Full Fat Plain Greek Yoghurt
  • 250ml Strawberry Couli
  • 1/2 tsp Vanilla Bean Paste (optional)
  • 1 tsp Natvia (optional if you wish it to be sweeter)

 

  1. In a bowl mix all the ingredients together till smooth. 
  2. Pour into individual ice cream moulds, put the sticks into them and knock a few times on the kitchen bench to knock out any bubbles that may still be in the mix. Place into the freezer overnight. 

Delicious!!!
