Here it is Everyone!!! This is one of my all time favourite recipes and has been in my family since I was a child. My mother used to make this when we were kids using wheat flour to make a sort of crust instead of pastry, hence the impossible part. To make it low carb and gluten free I have removed the flour and replaced it with Almond meal.

Impossible Quiche is a super easy, low carb recipe that is perfect either as a warm quiche or as a cold slice for the kids. It is great to freeze for up to 1 month and easy to reheat for breakfast. Serve with a quick salad for lunch or dinner or chill overnight for a quick slice for the kids lunchboxes. This recipe is so easy and the oven does most of the work for you. Just mix the two sets of ingredients together and bake. No need to grease the dish. I hope you Enjoy as much as we do!!!

Ingredients

Place into the base of Baking Dish

  • 200g diced bacon
  • 3/4 cup grated cheese – Cheddar or a mix with Mozerella & Parmesan
  • 3 spring onions or shallots sliced

Mix together in Bowl till smooth

  • 5 large whole eggs
  • 1/4 cup almond meal
  • 3/4 cup cream mixed with 1/2 cup water

Directions

  1. Preheat the oven to 170c. 
  2. Sprinkle the base of a baking dish with the first list of ingredients.
  3. Mix the second list of ingredients together till smooth and pour into baking dish over the other ingredients. Move around gently with a fork to ensure the liquid mix disperses throughout the other ingredients.
  4. Bake in the oven for 1 hour and 10 minutes until the middle of the dish is firm and the top browned. 
  5. Remove from oven and let cool for 10 minutes before slicing.
