Impossible Asparagus and Smoked Salmon Quiche.

If I could only share the aroma of this quiche cooking it would be on the menu in your house tomorrow. Even my 8 year old couldn’t resist a big slice for dinner. This Impossible Asparagus and Smoked Salmon Quiche incorporates two of my favourite ingredients, salmon and fresh Asparagus. It takes about 5 minutes to put together and about an hour to cook. So simple for such an incredible result. 

This version of Impossible Quiche is my super simple, low carb recipe that is perfect either as a warm quiche or as a cold slice for the kids. It’s one of those dishes that can be served for breakfast, lunch or dinner. This recipe is so easy and the oven does most of the work for you. Just place the first set of ingredients in the dish, pour the second set over the top and bake. It really couldn’t be easier. I use my favourite Pyrex glass baking dish for this recipe and I never need to waste time greasing the dish, for more information on this see the My Favourite Kitchen Equipment page. Asparagus Spears Darker RS CC

Ingredients

Place first into the base of an ungressed Baking Dish

  • 200g Smoked Salmon Pieces (or you can also use drained tinned Red or Pink Salmon broken up with a fork)
  • 3/4 cup grated Full Fat Cheddar Cheese
  • 2 bunches of fresh Asparagus spears, washed with the bottom inch removed and cut into 1cm rounds. Keep some of the tips to the side to decorate the top before baking. 

Mix together in Bowl with a fork until smooth

  • 5 large whole eggs
  • 1/4 cup almond meal
  • 3/4 cup cream mixed with 1/2 cup water
  • 1/2 tsp salt
  • A few grinds of freshly cracked black pepper (Optional)

  1. Preheat the oven to 170c. 
  2. Sprinkle the base of a baking dish with the first list of ingredients.
  3. Mix the second list of ingredients together with a fork till smooth and pour into baking dish over the other ingredients. Move around gently with to ensure the liquid mix disperses throughout the other ingredients. Sprinkle over the reserved Asparagus tips. 
  4. Bake in the oven for around 1 hour until the middle of the dish is firm and the top browned. 
  5. Remove from oven and let cool for 10-15 minutes before slicing. 

So Delicious!!!
