Italian Tomato Sliders.

Today’s recipe is a quick one for the school holidays. My kids and I have decided that Tomato Sliders are super quick and absolutely Delicious!!! Under my watchful eye my little chefs can get into the kitchen and make these morsels themselves (with my supervision as there are knives involved). All you need is fresh ingredients and you’ll have a light lunch or easy snack in no time. Toppings are endless and can include basil and Balsamic drizzle, a dollop of fresh Pesto, sliced ham and cheddar cheese or a dollop of black olive tapenade. It really is up to your own imagination. We use medium red tomatoes for this recipe but you can use any type of tomato as long as the slices are large enough to support the topping.

Ingredients

  • 4 fresh firm medium tomatoes washed and thickly sliced (about 4 slices per tomato)
  • 4 medium fresh bocconcini cheeses washed and pated dry with paper towel and sliced thickly
  • fresh basil leaves washed and dried
  • Balsamic drizzle or standard balsamic vinegar

 

  1. Lay the tomato slices across a plate.
  2. Add slices of Boccuncini cheese and a fresh basil leaf to each slice. 
  3. Drizzle with Balsamic drizzle or Balsamic Vinegar.

Eat them up before the kids get them all! Enjoy!!!
