Roast Red Capsicum Dip

Making freshly roasted capsicum is really easy and this dip is a perfect way of using them. Great for serving at BBQ’s or parties this dip is really delicious and can be served with strips of low carb vegetables such as cucumber, broccoli, cauliflower or low carb crackers. Enjoy!!!

Ingredients

  • 300g Roasted Red Capsicum 
  • 3 tbsp grated parmesan cheese
  • 1/2 cup cashews
  • 1/2 tsp salt
  • 3 tsp red wine vinegar
  • 1 tsp minced garlic

  1. Roast the Red Capsicum first. Follow the instructions here.
  2. Put the peeled roasted capsicum and the other ingredients in a small food processer or blender. Blitz until smooth. Chill and serve. Keeps well in the fridge for 2-3 days.
