Tzatziki is fresh, tangy and perfect for serving in Summer with meats and salads. It’s super easy to make and can be prepared the day before or just before serving. I made this Tzatziki to go with my Greek Kofta.

Ingredients

  • 1/3 telegraph cucumber washed and diced finely 
  • 1/4 cup fresh mint finely diced 
  • 1/2 tsp crushed garlic
  • 1 cup Greek yoghurt
  • 1 tsp salt
  • 1 tbsp lemon juice

Directions

  1. Add all the ingredients to a bowl and mix well. Taste to ensure the seasoning is correct. Serve immediately or chill and serve the next day.
