Fresh tomato’s are so lovely at this time of year and with a few extra ingredients they can make such a super quick salad for summer BBQ’s or a light lunch. I love this salad because it’s so easy to make and is packed full of flavour. There is nothing like the flavour of fresh tomato’s and this is a super quick salad that can be thrown together at the last minute. Dukkah is one of my favourite pantry staples. These days you can get Dukkah in a range of flavours but my favourite uses Middle Eastern Spices which blend beautifully with fetta and olive oil. Sesame Seeds and Pistachio’s are often used which gives a lovely texture.

Ingredients

  • 500g Roma Tomato’s 
  • 100g Greek Feta full fat
  • 2 tbsp good quality Light Olive Oil
  • 2 tbsp Dukkah with Middle Eastern Spices
  • Freshly cracked Black Pepper

 

Tomato Dukkah Salad INB RS CC

  1. Wash the tomatos and dry. Sliced into thick slices and layer on a serving dish. Crumble over the fetta cheese, sprinkle over the Dukkah and drizzle over the Olive Oil.  
  2. Serve immediately. Best eaten freshly made but can last 2 days in the fridge.
