Kale, Bacon & Mushrooms.

Kale is a member of the cabbage family. It’s a nutrient dense food containing high levels of antioxidants, vitamins and minerals and is a fantastic ingredient to cook with. Whenever I feel like a vitamin and mineral boost I make this dish. You just feel healthier as you are eating it. Simple and quick you can add almost any of your favourite ingredients to develop the flavours you love. Enjoy!!

  • 1 tbsp olive oil
  • 1 white onion diced
  • 200g bacon diced
  • 3 mushrooms sliced
  • 1 bunch of kale
  • Soy sauce or Tamari to serve

Kale & Bacon Ingredients RS CC

  1. Heat a large frying pan on medium heat. Add the onions and cook until soft.
  2. Add the bacon and mushrooms and cook until the bacon is fragrant and the mushrooms soft.
  3. Whilst the first 2 steps are happening, prepare the kale by washing the leaves and stripping the leaves off the steam. Do this by holding the end of the steam in one hand and running a very sharp knife down each side of the steam with the other, so the leaves fall off onto a large chopping board. Discard all the steams and cut the washed leaves into thin strips.
  4. Once the onions, mushrooms and bacon are cooked, add the kale strips in 2 batches cooking until they are wilted. Continue to cook until the kale is soft.
  5. Serve hot and for added flavour sprinkle over some soy sauce or Tamari.
